Power Up with Power Cookies!

Let me start by saying that to call these cookies is a stretch. They do have a lot of protein and they are slightly sweet. If you bake them in the shape of a cookie, well, you might be able to pass them off to a child as a cookie. But as an adult, unless you are on a restrictive diet, you are going to be hard pressed to sell the idea that these are cookies. These cookies are gluten free and sugar free.
